Quick and Easy Cheese

In a stainless steel or enamel pot, slowly heat 1 gallon of milk to 185 *f.

Stir in 1/4 cup of vinegar and let sit for 15 min. keeping the temperature at 185*f.

Line a colander with cheese cloth and pour the curds and whey into the cheese cloth.

Let it drain a bit then dump the curds into a mixing bowl and sprinkle with  3 pinches of salt ( thumb and 2 fingers) mix well.

It's ready to eat.  I like it warm and fresh right out of the bowl spread on crackers,
my girls like it when it's been in the frig and cooled off.  You can also add  your favorite herbs and spices to this cheese, it will take on their flavor, we like garlic and basil the best.
